!FEST Coffee Mission is green coffee brokers who started in Central America. Since then our CEO - Dmytro Slukin - has been working closely with farmers aiming to increase the green beans price and bring something outstanding to the market. Eventually he has nailed big-scale anaerobic process lots with year to year consistency and low cost of production. This was a brand-new experience for the origin and consumers. Since that time our geography of the green coffee sourcing has been constantly growing. Among our partners there are cooperatives with outstanding histories and dozens of dedicated farmers.
Green coffee from farmers
We offer green coffee from farmers. Today we work directly with more than 200 farms from 11 countries, which are:
- Brazil – with a chocolate-nutty profile. It's perfect for those who tend to have a stable taste profile as Brazilian beans are known for constant quality from year to year.
- Peru – “comfortable”, stable, interesting coffee with a fruity profile.
- Bolivia – characterized by a full body and bright lactic acid development.
- El Salvador – with developed acidity of sour berries and sweet fruity notes at the same time.
- Honduras – sweet in balance, with hints of ripe and dry fruits.
- Guatemala – with intense acidity when washed and full-bodied, saturated, fruity when naturally processed. Curious to know that Guatemalan greens are the best in maintaining quality with time.
- Colombia – known for its full body and bright malic acidity.
- Ethiopia – the main coffee trick of this origin is floral flavor combined with notes of fruits, berries and tealike taste.
- Kenya – famous for its sparkling phosphoric acid influenced by a special character of soils.
- Rwanda – with a berry bright coffee that can also boast phosphoric acidity, but unlike Kenya is at the same time very sweet.
- Indonesia – the specialty of this origin is wet hull processing influenced by the country's wet climate. The cup often can have an earthy aftertaste reminiscent of the pu-erh tea.

Besides, we often experiment with various aerobic and anaerobic types of fermentations and irregular cultivars. This allows us to get outstanding cups considered untypical for local terroirs. Due to this our menu always contains a full spectrum of flavor profiles from every origin with all the lots being thoroughly selected during the sourcing trips.

How do we organize the sourcing of coffee beans?
Sourcing coffee beans is a challenging yet essential part of our job. At the end of the year, we always analyze the amounts of coffee sold, demands for each segment and based on this make up a procurement plan. In a search for a partner, the !FCM team contacts different representatives from the origin country. Following the main criterion of quality (no lower than 80 points, no greens defects and no black beans for the commercial coffee) and volume we choose several producers that pretend to be a match for us. Having all the onsite meetings and cuppings arranged our colleagues leave for a coffee sourcing trip.
The lots of the green coffee from farmers are agreed before the arrival. We tell the potential partner what we are looking for and they say what they can offer. Price comes after the cupping. Usually, we lay out one obligatory cupping for each company and one extra, in case the first one doesn`t allow us to make a final decision. Besides tastings, our coffee sourcers also inspect farms and mills to see the growing conditions, how they run plantations and manage the processing. The most precious thing while visiting the producing country is experience exchange. We are always keen to get new knowledge from the origin, being the same way open to sharing our expertise in roasting and cupping.
After defining the lots we like, it's high time to negotiate the volume and price. When everything is set, Dmytro - our CEO - has to approve the numbers. The next step in green coffee sourcing is signing a contract and making arrangements with logistic companies. Usually, that takes around 3 weeks. Before sending us the whole volume of chosen coffee we receive a preshipment - 1 kilo of beans which are already packed for delivery. Our team checks that the quality is the same as they agreed during the sourcing tour. If it's not, we can refuse the order. And if everything suits us, the coffee is packed in vacuum or "GrainPro"-type bags and sent to our warehouses. We have 4 of these: in Ukraine, Poland, Turkey and the main one in Antwerp. It is super high-tech with the greens stored in the most suitable conditions, maintained by the professional staff. Due to having some warehouses in convenient locations, we manage to deliver orders to our worldwide clients within several days.
Just after receiving the new harvest our team of Q-graders assess the coffee and prepare tasting samples. What's also important, we have new arrivals during the whole calendar year due to buying both the main and fly crops in the producing countries. So lots from every continent are always available in our catalog.
